Having recently stocked up on a hefty seven pounds of sprinkles from Amazon (yes, seven!), we are absolutely brimming with excitement and ready to transform any day into a festive celebration. During our creative process, we playfully debated what to call these vibrant little spheres. Some of our friends suggested “unicorn eggs” due to their magical, multi-hued appearance. While the whimsical name certainly fits the aesthetic, I couldn’t help but overthink it, pondering the biological impossibility of mammals laying eggs! Perhaps it’s just the baker in me taking things too literally, but the idea of “unicorn poop,” a more common whimsical dessert name, also didn’t quite appeal for a birthday treat. After all, who wants to eat “poop” on their special day, even if it’s deliciously decorated? Call me old-fashioned, but for our birthday, we prefer something that evokes pure joy and sweetness!

Regardless of the quirky names that came to mind, the undeniable truth is that these little treats are simply delicious. There’s an inherent cheerfulness about rainbows; just gazing at their spectrum of colors seems to instantly brighten any mood and put a smile on my face. - Seamless Finish: To avoid a messy bottom, after dipping, gently tap the toothpick holding the truffle against the edge of the chocolate bowl to remove excess chocolate. Then, when placing it on parchment paper, use a second toothpick to gently slide the truffle off the first, creating a smooth, flat base.

Rainbow Cake Truffles Recipe

Ingredients
- 1 Package White Cake Mix + ingredients required to make it (usually oil & eggs)
- 1/3 Cup Vanilla Frosting
- White Chocolate, melted (we recommend these melting wafers)
- Rainbow Sprinkles
- Wilton Gel Food Coloring: Red, Golden Yellow, Lemon Yellow, Kelly Green, Royal Blue & Violet
Instructions
- Preheat oven to 350 degrees F. Place 12 cupcake liners in your muffin tin.
- Mix packaged white cake mix according to package directions. Divide the batter evenly between 6 small bowls. Tint each bowl a different color using the gel food coloring. Dip a toothpick into the color, then dip and stir it into the batter. Repeat until the desired vibrant tint is reached. For orange, combine golden yellow with a touch of red.
- Add approximately 2 tablespoons of each colored batter to your muffin tin, creating 2 cupcakes per color. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely on a wire rack.
- Once thoroughly cooled, crumble each colored muffin into its own separate small bowl. Add 1 Tablespoon of vanilla frosting to each bowl and stir until well combined and the mixture forms a moist dough-like consistency.
- To form the truffles, you can either take a small amount of each color and gently roll them together in your hand, or, for easier handling, roll each individual color into small 1/4-inch balls. Then, gently roll and “smoosh” these colored balls together to form a larger, marbled rainbow truffle. Place the formed truffles on a baking sheet lined with parchment paper. Freeze for at least two hours to firm up.
- Once the truffles are well-chilled, prepare your melted white chocolate. Place chocolate melts in a microwave-safe bowl and microwave in 30-second intervals, stirring thoroughly after each, until completely smooth and melted.
- Remove the rainbow truffles from the freezer. To dip, insert a toothpick gently into the top of each truffle. Submerge the truffle into the melted chocolate, turning gently to ensure it’s fully coated. Lift from the chocolate, turning again gently to allow any excess to drip off. Immediately place the dipped truffle onto a clean baking sheet lined with parchment paper. Carefully remove the toothpick (using another toothpick to hold the truffle down while pulling up can help). Quickly cover the still-wet chocolate with an generous amount of rainbow sprinkles before it sets.
- Allow the chocolate coating to harden completely. You can place them in the refrigerator to speed up this setting process. Store your beautiful Rainbow Cake Truffles in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer freshness.
