  • 1/3 Cup Brown Sugar
  • 1/4 Cup Salt
  • 1/4 Cup Coffee Beans, coarsely ground
  • 1 Tablespoon Garlic Powder
  • 1/2 Tablespoon Onion Powder
  • 1/2 Tablespoon Cumin
  • 1/2 Tablespoon Cayenne Pepper (adjust to taste for desired heat)
  • 1 Tablespoon Black Pepper, freshly ground

Instructions

  1. Prepare your smoker: Fill your smoker with your preferred wood chips or chunks. Applewood or cherrywood are highly recommended for this recipe due to their mild, sweet smoke. Leave the water pan dry; this crucial step helps achieve wonderfully crispy chicken skin by reducing humidity inside the smoker. Begin preheating your smoker to a consistent temperature of 300°F (150°C).
  2. Prepare the chicken: Remove the whole chickens from their packaging and check to ensure giblets have been removed from the cavity. Thoroughly pat the chicken skin dry with paper towels. This step is essential for crispy skin. Place the uncovered chicken in the refrigerator while your smoker heats up and you prepare the rub.
