- 5 lbs Honeycrisp Apples, you can use another variety, but this one offers the most wonderful flavor and texture
- 1/4 Cup Apple Juice
- 1/4 Cup Cane Sugar
- 1 Tsp Cinnamon
- 16 oz Canned Pumpkin (pure pumpkin puree, not pie filling)
- 2 Tsp Pumpkin Pie Spice
- 1 Vanilla Bean, split lengthwise and seeds scraped
- 2 Tsp Lemon Juice
Instructions
- Prepare the apples: Peel, core, and dice the Honeycrisp apples into roughly 1-inch pieces. Place them into your crock pot along with the apple juice, cane sugar, and cinnamon.
- First Cook Cycle: Cover the crock pot and cook on the LOW setting for 8 hours, stirring occasionally every few hours to ensure even cooking and prevent sticking. The apples should be very soft and easily mashed.
- Puree the Apples: Once the first cook cycle is complete, carefully transfer the applesauce mixture to a blender or food processor. Puree until smooth. Alternatively, for a chunkier apple butter, you can use an immersion blender directly in the crock pot.
- Second Cook Cycle: Return the pureed apple mixture to the crock pot. Add the canned pumpkin, pumpkin pie spice, the split vanilla bean (and its scraped seeds), and lemon juice. Stir everything thoroughly to combine.
